World's First Okra Kimchi created by Angie J., Thrive Health And Beauty.

Okra is one of the nutritious clean food with many health benefits. It's a great candidate for fermentation because it's rich in long-chain carbohydrates which act as a prebiotic. Therefore, when okra fermented and became Okra-kimchi, it became nutrient dense food which is a rich source of probiotics, folate, fiber, antioxidants, magnesium, vitamins, and food enzymes to strengthen our immune system, and our gut health.

Okra Kimchi is fermented food which may reduce inflammation, prevent yeast infections, slow aging, weight loss, support our heart health and our reproductive system.

Now, I would like to introduce you the world's first "Okra Kimchi" which

first created by Angie J, Thrive Health And Beauty.


  • 20 okras

  • 1/4 cup sea salt

  • 1/4 cup garlic, minced

  • 2 tablespoons ginger, minced

  • 1 teaspoon sugar

  • 2 tablespoons fish sauce

  • 1cup Korean chili flakes

  • 1/2 bell pepper, blended (optional)

  • Sweet rice paste (optional) : 2 tablespoons sweet rice powder + 1 cup water


  1. Wash okras thoroughly 3-4 times in the water and running water

  2. Place washed okra in a large bowl

  3. Mix okra and sea salt gently. Then, let it sit for 30 minutes.

  4. In the meantime, add all the ingredients together in a separate mixing bowl and let it sit for 30 minutes as well. This will become the main kimchi-sauce to ferment okras.

  5. (Optional) If you like more refreshing taste then, blend 1/2 bell pepper with 2 tablespoons of water.

  6. (Optional) If you like to have juicy kimchi, then before you add all the ingredients, you have to make sweet rice paste. Add sweet rice powder and water and stir to let sweet rice powder dissolve.

  7. Then bring it to stove on low heat. Keep stir for a couple of minutes. It will soon bubbling and turn thickening.

  8. Keep stir for another minute or two. Then, turn off stove and let it cool.

  9. When the sweet rice paste is cool, add all the ingredients in separate mixing bowl and let it sit for 30 minutes.

  10. After 30 minutes, once the okras wilted, rinse the okras one more time and drain them well.

  11. Please those rinsed okras on large bowl and add kimchi-seasoning mixtures into okras and mix them gently until all of okras well-coated.

  12. Place and fill in seasoned okra kimchi to compress it all in the jar.

  13. Tightly close the lid and leave out at room temperature overnight the first night. Then, next morning it's ready to keep it in the refrigerator.
