Thanksgiving is around the corner, I would like to share sweet and savory authentic Korean dish, Japchae which nowadays many people enjoys. Japchae is a very popular dish. It is the number one sought after dish particularly during the Korean festive holidays, birthdays, special gatherings, and occasions, but it is also enjoyed on any other common day as well. The main highlight of the dish is glass noodles, which is made from sweet potatoes, along with colorful vegetables and well-seasoned meat. This also could be a great vegan and vegetarian dish with variety of vegetables without meat.
The main ingredient satiated by sweet potato starch, so you can see opaque white spots on the dry noodle, but once it’s cooked, it’ll turn glassy and chewy texture. Sweet potato starch contains magnesium, which has a vasodilation effect that lowers blood pressure and lowers cholesterol. Japchae also contains a large amount of antioxidant.
Here goes my Japchae Recipe for you.
250g dry sweet potato starch vermicelli noodle/Japchae noodle
1 large onion
1 large carrot
1 bunch spinach
1 bunch chives (I used Korean chives)
5 shiitake dry mushrooms
1 cup of dry black mushrooms
200g beef (you can use pork, shrimp or without meat for vegan dish)
2 tablespoons sesame seeds
4 tablespoons soy sauce
4 tablespoons sesame oil
2 tablespoons ume plum extract or brown sugar
1/2 teaspoon black pepper
1 tablespoon sesame seeds
1 tablespoon minced garlic
3 tablespoon soy sauce
4 tablespoon sesame oil
1 tablespoon sweet ume plum extract or brown sugar
1/2 teaspoon black pepper
Soak japchae noodle in the water for about 5 min.
Soak mushrooms in the water for about 10 min.
slice vegetables about 1" long and thin.
slice meat and marinate with all of above marinade meat-ingredients.
Boil water and add salt, then heat the spinach (put spinach in the boiling water and take them within second.)

stir fry sliced onion (stir fry vegetable from light color to colorful.)
stir fry sliced carrot.
stir fry sliced shiitake mushrooms
stir fry black mushrooms
stir fry marinated meat.
Boil water and add salt, then add japchae noodle, add 1 teaspoon olive or vegetable oil cook noodle for about 6 min.
Remove noodle into large mixing bowl.
Add all the vegetables along with beef into the bowl.
Add japchae ingredient-soy sauce, sasame, roasted sesame seeds, black pepper, sesame oil, ume plum extract/brown sugar, and mix with vegetables, beef and noodle.
This will serve 12 people. Enjoy Japchae as it is or with other dish.
